Cascabel Chilies, or rattle chilies, owe their name to the many seeds inside them that rattle when you shake them. It is a beautifully dark red chili of very mild heat but with a lot of flavour. One of my favourite dried chilies to work with and widely used in Mexican everyday cooking.
