Description :Dried Pasilla Chilies are a mild, thin and long chili that when fresh, are known as 'chilaca peppers' and grown mainly in the central regions of Mexico. They are wrinkly with a dark red tint to their flesh. Also known as 'black chilies', the Pasilla, which literally means 'small raising', have a wonderfully fragrant and subtle grape flavour with deep, almost chocolate-like tones to them; they are very mild and almost as sweet as a raising, which I reckon is the reason for their name. They are widely used in the making of the Oaxaca's Mole Negro. This chilies are packed with flavour and go super well with poultry, game and pork. I use them a lot!
