Piloncillo is pure unrefined sugar made of sugar cane juice that has been boiled and poured into cone shaped moulds until harden. It is been made in Mexico since Aztec times and it was commonly used way before refined sugar appeared. With a rich, smoky, caramely flavoured, it resembles molases and can be used instead of brown sugar. Widely used in desserts in Mexico, to coat fruits and to sweeten drinks. I absolutely love it!
