Mole (pronouced as Mo-lai, as in the soccer song ole, ole, ole, ole), is a Mexican sauce redish-dark in colour and made from dried chilies, spices, seeds and chocolate. It is the Mexican answer to curry and it is a super traditional and delicious dish in Mexico, eaten all over the country. The most popular moles are those made in the regions of Puebla and Oaxaca in the south of Mexico and traditionally they it would have been a celebratory dish served at weddings, funerals, christmas, etc. It is absolutely delicious. Don't be put off by the notion that it has chocolate, this is an awesome savoury dish worth of all the love you can give it!
