Description :I first came across this magnificent Irish Goat Cheese three years ago while on holiday in West Cork and I felt immediately in love with it! It was a revelation: creamy, soft, snow white cheese with a clean, beautifully sweet, almost floral, flavour to it; I adore it! The cheese is hand made with no artificial flavours or preservatives in a little town south of the Burren in Co. Clare; It is matured slowly and allowed to developed its own natural rind.
The production is managed around organic and sustainable farming practises and the 65 acre farm can be visited Monday through Friday (booking required), which includes a taste of their full range of cheeses (no better way to spend a couple of hours).
St. Tola Irish Goat Cheese is by far my favourite Irish cheese... I could eat it by the bucket load (and I think I have!). It's a perfect companion for Mexican bean based dishes. It withstands the heat well, which makes it ideal for my Mexican bean and cheese tamales! For stockists in your area check out their website. I can't recommend it enough.
