We met Shannen Butler Keane, the Diva herself and owner of Diva Boutique Bakery & Cafe, a couple of years ago at the Theatre of Food in Electric Picnic. Shannen is my kind of crazy and we hit it off from the beginning. Herself and Taylor, brother and head baker, have been feeding folk from their funky cafe and their deli in Ballinspittle in County Cork. Shannen has won loads of awards and like many of us in the food industry, is constantly looking to do things differently. She's hosting a number of collaborations at her cafe this summer and at the beginning of the year, she was kind enough to asked us to do a pop-up at the cafe. This promises to be a great evening.
